Firstly, Cold pressed oil is live with nutrients when reaches home as compared to refined or non-cold pressed oil, which is already heated more than once. So not all nutrients are lost even after cooking.
Secondly, Purpose of oil in cooking is to take out taste, aroma and nutrients from spices and transfer it to our vegetables or dish.
Thirdly, in many cuisines, Oil is used raw, hence getting the full benefit of its nutrition.

Our Traditional Oils are – Sesame Oil & Mustard Oil.
As per Charak Samhita, Black Sesame Oil is the best oil in this earth.
Our ancestors or ayurvedic sastras, intelligently chose particular seeds for oil.
They have Omega-3 and all major nutrients in right amount needed for the body.
Mustard Oil can even remove bad cholesterol and bad fats from the body and lever.
These oils have multipurpose use.
Virgin means untouched. So if oil is untouched by modern, chemical process, its virgin. If seed also is desi, free from pesticide, that makes the oil ultra or extra virgin
Oil that has been processed at a temperature below 45 degree celcius, as then only nutrients are preserved, otherwise they are destroyed.
Firstly, When it is processed in a 100% wooden processing parts machine.
Secondly, its run at Bull Speed.
Because purpose of oil making was giving good health to people, not to make profits. Horse can do revolutions faster, but slow movement leads to healthy oil extraction, and nutrients are not lost.
It may be pure, but not necessarily nutritional. If machine heats up the seed/oil, its nutrients will be lost.
Organic is matter of growing the seed without harmful chemicals, using natural fertilizers. Cold pressed is matter of process of extraction. Both are different things.
Organic oil may not be Cold pressed!
